Ingredients

2 ribeye or sirloin steaks (about 1 inch thick)

Salt and black pepper to taste

1 tablespoon olive oil

2 large onions, thinly sliced

3 cloves garlic, minced

2 cups beef broth

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon onion powder

1 teaspoon thyme (dried or fresh)

2 tablespoons all-purpose flour

Fresh parsley for garnish (optional)

Instructions

Prepare the Steaks: Season both sides of the steaks generously with salt and black pepper. Let them sit at room temperature for about 15 minutes.

Sear the Steaks: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned steaks and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Remove the steaks from the skillet and set aside to rest.

Cook the Onions: In the same skillet, add the sliced onions. Cook them over medium heat, stirring occasionally, until they become soft and caramelized, about 10-15 minutes. Add the minced garlic during the last 2 minutes of cooking, stirring constantly to avoid burning.

Make the Gravy: Once the onions are caramelized, sprinkle the flour over the onions and stir to coat evenly. Cook for an additional minute. Gradually pour in the beef broth, stirring continuously to prevent lumps. Add Worcestershire sauce, soy sauce, onion powder, and thyme. Bring to a simmer and cook until the gravy thickens, approximately 5 minutes.

Combine Steak and Gravy: Return the steaks to the skillet, spooning the onion gravy over them. Let them simmer together for an additional 2-3 minutes, allowing the flavors to meld.

Serve: Remove from heat and garnish with fresh parsley if desired.
