Ingredients
  

4 salmon fillets, skinless

1 cup orzo pasta

2 cups low-sodium chicken or vegetable broth

1 medium onion, finely chopped

3 garlic cloves, minced

1 lemon (zest and juice)

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Optional: ¼ cup feta cheese, crumbled

Instructions
 

Sear the Salmon: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the salmon fillets with salt, pepper, and smoked paprika. Once the oil is hot, add the salmon fillets to the skillet and sear for about 4 minutes on each side or until cooked through. Remove the salmon from the skillet and set aside.

    Sauté Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent. Add the minced garlic and sauté for an additional 1 minute until fragrant.

      Cook the Orzo: Stir in the orzo pasta and toast it lightly for about 1-2 minutes. Then, pour in the chicken or vegetable broth, lemon juice, and lemon zest. Add dried oregano, and season with salt and pepper. Bring the mixture to a simmer and cook uncovered, stirring occasionally, until the orzo is al dente and most of the liquid has been absorbed, about 10-12 minutes.

        Add the Tomatoes: When the orzo is almost done, stir in the halved cherry tomatoes. Cook for an additional 2-3 minutes until the tomatoes start to soften.

          Reintroduce the Salmon: Carefully place the cooked salmon back into the skillet on top of the orzo. Allow it to heat through for about 2 minutes.

            Serve: Remove the skillet from the heat and garnish with fresh parsley and crumbled feta cheese if using. Serve warm, scooping the orzo and tomatoes alongside the salmon.
