10 oz spaghetti

1 lb ground beef (or turkey)

1 medium onion, chopped

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 can diced tomatoes with green chilies (14.5 oz)

4 cups chicken or beef broth

1 can black beans, rinsed and drained (15 oz)

1 cup corn (frozen or canned)

1 cup shredded cheddar cheese

1 tbsp olive oil

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Sour cream for serving (optional)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

    Brown the Meat: Push the onions and garlic to the side of the pot and add the ground beef (or turkey). Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.

      Season the Meat: Stir in the taco seasoning, mixing well with the meat. Cook for another minute to allow the spices to enhance their flavors.

        Combine Ingredients: Add the spaghetti, diced tomatoes (with their juices), broth, black beans, and corn to the pot. Stir everything together to ensure the spaghetti is submerged in the liquid.

          Cook the Spaghetti: Bring the mixture to a boil, then reduce to a simmer. Cover and cook for 10-12 minutes, stirring occasionally, or until the spaghetti is cooked al dente and the liquid has mostly absorbed.

            Cheesy Finish: Once the spaghetti is cooked, remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy. Season with additional salt and pepper if needed.

              Serve: Garnish with fresh cilantro or parsley, and serve topped with a dollop of sour cream if desired.
