300g penne pasta

300g spicy Italian sausage, casing removed

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 can (400g) diced tomatoes

4 cups vegetable broth

2 teaspoons Italian seasoning

1 teaspoon red pepper flakes (adjust to taste)

1 cup fresh spinach

1 tablespoon olive oil

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

    Add the minced garlic and diced bell pepper to the pot, continuing to sauté for another 2-3 minutes until fragrant.

      Add the spicy sausage, breaking it up with a wooden spoon, and cook for about 5-7 minutes until browned.

        Stir in the diced tomatoes (with their juices), vegetable broth, penne pasta, Italian seasoning, and red pepper flakes. Bring to a gentle boil.

          Reduce the heat to low and cover the pot. Let it simmer for about 12-15 minutes, or until the pasta is al dente and has absorbed most of the liquid. Stir occasionally to prevent sticking.

            Once the pasta is cooked, fold in the fresh spinach and cook for another 2-3 minutes until wilted. Season with salt and pepper to taste.

              Remove from heat and let sit for a few minutes for the flavors to meld.
