One Pot Sausage Orzo

Ingredients
  

1 lb Italian sausage (mild or spicy, casings removed)

1 small onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 zucchini, diced

1 cup cherry tomatoes, halved

1 ½ cups orzo pasta

4 cups chicken broth

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish

Grated Parmesan cheese for serving (optional)

Instructions
 

Heat olive oil in a large pot or Dutch oven over medium heat.

    Add the diced onion and sauté until translucent, about 3-4 minutes.

      Stir in the minced garlic and cook for an additional minute, ensuring it doesn’t burn.

        Add the Italian sausage to the pot, breaking it up with a spatula as it cooks until browned, about 5-7 minutes.

          Once the sausage is cooked through, add the diced bell pepper and zucchini to the pot. Cook for another 5 minutes until vegetables start to soften.

            Stir in the halved cherry tomatoes, orzo, chicken broth, Italian seasoning, salt, and pepper. Bring to a gentle boil.

              Reduce the heat to low, cover the pot, and let it simmer for about 10-12 minutes, or until the orzo is al dente and has absorbed most of the liquid. Stir occasionally to prevent sticking.

                Once cooked, remove from heat and let it sit, covered, for an additional 5 minutes.

                  Fluff the orzo with a fork and mix everything together. Adjust seasoning if needed.

                    Serve warm, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.
