12 oz penne pasta

2 tablespoons olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 cup sliced mushrooms

1 can (14 oz) diced tomatoes

2 cups vegetable broth

1 tablespoon Italian seasoning

1 teaspoon red pepper flakes (optional)

1 cup sliced pepperoni

1 cup mozzarella cheese, shredded

Salt and pepper to taste

Fresh basil leaves, for garnish

Sauté the Veggies: In a large pot or Dutch oven, heat the olive oil over medium heat. Add diced onion and cook for 3-4 minutes until translucent. Stir in minced garlic, bell pepper, and mushrooms, cooking for an additional 3-5 minutes until softened.

    Combine Ingredients: Add the penne pasta, diced tomatoes (with juices), vegetable broth, Italian seasoning, red pepper flakes (if using), and season with salt and pepper. Stir everything together until the pasta is well coated with the seasoned broth.

      Cook the Pasta: Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 12-15 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

        Add Pepperoni and Cheese: Once the pasta is cooked, stir in the sliced pepperoni and half of the mozzarella cheese. Mix well until the cheese is melted and everything is evenly distributed.

          Serve: Remove the pot from heat and sprinkle the remaining mozzarella cheese on top. Cover the pot for a few minutes to let the cheese melt further.

            Garnish: Before serving, garnish with fresh basil leaves and a sprinkle of salt and pepper if desired.
