Ingredients

12 oz pasta (penne or rigatoni works great)

1 lb thinly sliced beef (ribeye or sirloin)

1 medium onion, thinly sliced

1 bell pepper (red or green), thinly sliced

3 cloves garlic, minced

4 cups beef broth

1 cup heavy cream

1 cup provolone cheese, shredded

1 cup mozzarella cheese, shredded

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Beef: In a large pot, heat the olive oil over medium heat. Add the thinly sliced beef and season with salt and pepper. Cook until browned, about 3-5 minutes. Remove the beef from the pot and set aside.

Cook the Vegetables: In the same pot, add the sliced onion and bell pepper. Sauté for about 4-5 minutes until they begin to soften. Stir in the minced garlic and cook for an additional minute until fragrant.

Combine Ingredients: Return the beef to the pot. Add the pasta, beef broth, heavy cream, and Italian seasoning. Bring the mixture to a boil, then reduce the heat to medium-low and simmer uncovered for about 12-15 minutes, or until the pasta is al dente and the liquid has slightly thickened. Stir occasionally to prevent sticking.

Melt the Cheese: Once the pasta is cooked, remove the pot from heat. Stir in the provolone and mozzarella cheese until melted and combined.

Serve: Garnish with chopped fresh parsley. Serve hot and enjoy your cheesy, hearty meal!
