12 ounces fettuccine or spaghetti

4 cups vegetable broth

4 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon red pepper flakes (optional)

1 cup grated Parmesan cheese

1 medium lemon (zest and juice)

1 cup fresh spinach (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant (but not browned).

    Pour in the vegetable broth and bring to a gentle boil. Add the fettuccine or spaghetti, ensuring it is submerged in the broth.

      Add red pepper flakes if you like a bit of heat. Season with salt and pepper. Stir well.

        Cover the pot and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.

          Remove the pot from the heat and stir in the lemon juice, lemon zest, and Parmesan cheese until everything is well combined. If using, fold in the fresh spinach until wilted.

            Adjust seasoning with more salt and pepper as needed.

              Serve immediately, garnishing with freshly chopped parsley on top.
