One Pot French Onion Pasta

12 oz (340g) fettuccine or spaghetti

3 large yellow onions, thinly sliced

4 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 cup grated Gruyère cheese

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Onions: In a large pot, heat the olive oil and butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 25-30 minutes until onions are deep golden brown and caramelized. If they stick, add a splash of broth to deglaze the bottom of the pot.

    Add Garlic: Stir in the minced garlic and thyme and cook for another 2-3 minutes until fragrant.

      Cook the Pasta: Pour in the vegetable broth and bring it to a boil. Once boiling, add the fettuccine (or spaghetti) to the pot. Cook according to package instructions, stirring frequently, until the pasta is al dente and most of the liquid is absorbed (about 9-12 minutes).

        Finish with Cream and Cheese: Lower the heat and stir in the heavy cream, salt, and black pepper. Gradually add both the Gruyère and Parmesan cheese, stirring until melted and creamy.

          Serve: Remove from heat and let it sit for a few minutes to thicken slightly. Garnish with fresh parsley before serving.
