8 oz (225 g) fettuccine or linguine pasta

2 cups (150 g) sliced mushrooms (such as cremini or button)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup (240 ml) vegetable or chicken broth

1 cup (240 ml) heavy cream

½ cup (50 g) grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms, cooking for an additional 5-7 minutes until the mushrooms are softened and browned.

    Add Pasta and Liquids: Pour in the vegetable or chicken broth and bring to a gentle boil. Add the fettuccine (or pasta of your choice) and ensure it is submerged in the broth.

      Simmer: Reduce the heat to low, cover the pot, and let the pasta simmer for about 10-12 minutes, stirring occasionally to prevent sticking. Cook until the pasta is al dente and most of the liquid has been absorbed.

        Stir in Cream and Cheese: Once the pasta is cooked, lower the heat and slowly stir in the heavy cream and grated Parmesan cheese. Mix until the cheese is melted and the sauce is creamy. If the sauce is too thick, you can add a splash of broth or water to reach your desired consistency.
