12 oz (340g) penne pasta

1 lb (450g) Italian sausage (mild or spicy, your choice)

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 can (14 oz) diced tomatoes with juice

4 cups (950ml) low-sodium chicken broth

1 tsp Italian seasoning

½ tsp red pepper flakes (optional)

Salt and black pepper, to taste

1 cup (100g) shredded mozzarella cheese

½ cup (50g) grated Parmesan cheese

Fresh basil, for garnish

Instructions
 

Brown the Sausage: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.

    Sauté Vegetables: Add the diced onion and red bell pepper to the pot, cooking for an additional 3-4 minutes until the onion is translucent. Stir in the minced garlic and cook for 1 more minute until fragrant.

      Combine Ingredients: Add in the penne pasta, diced tomatoes (with their juice), chicken broth, Italian seasoning, red pepper flakes (if using), and season with salt and black pepper. Stir to combine all ingredients.

        Cook the Pasta: Bring the mixture to a boil; then reduce the heat to a simmer. Cover the pot and cook for about 12-15 minutes, or until the pasta is al dente and has absorbed most of the liquid, stirring occasionally to prevent sticking.

          Add Cheese: Once the pasta is cooked, reduce the heat to low and stir in the shredded mozzarella and grated Parmesan cheese. Mix until the cheese is melted and creamy, about 2-3 minutes.

            Serve: Remove from heat and garnish with fresh basil. Serve immediately in bowls, adding more cheese if desired.
