1 cup orzo pasta

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 cup cherry tomatoes, halved

1 cup fresh baby spinach

1 cup grated Parmesan cheese

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Lemon wedges, for serving

Instructions
 

Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once heated, add the chopped onion and garlic. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.

    Cook Shrimp: Add the shrimp to the skillet. Season with salt, pepper, and half of the Italian herbs. Cook the shrimp for 2-3 minutes on each side until they turn pink and opaque. Remove from the skillet and set aside.

      Prepare Orzo: In the same skillet, add the orzo and toast it lightly for 2 minutes, stirring frequently to prevent burning. This will enhance the flavor of the pasta.

        Add Broth and Tomatoes: Pour in the chicken broth and add the halved cherry tomatoes. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 8-10 minutes until the orzo is tender and has absorbed most of the liquid.

          Stir in Spinach and Cheese: Once the orzo is cooked, stir in the fresh spinach and cook until wilted, about 1-2 minutes. Then, mix in the grated Parmesan cheese and the remaining Italian herbs until well combined.

            Combine and Serve: Gently fold the cooked shrimp back into the orzo mixture. Taste and adjust seasoning with more salt and pepper if desired. Garnish with fresh parsley.
