4 bone-in, skin-on chicken thighs

1 lb baby potatoes, halved

4 cloves garlic, minced

1/4 cup grated Parmesan cheese

1/4 cup olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the halved baby potatoes, minced garlic, olive oil, thyme, rosemary, paprika, salt, and pepper. Toss everything until the potatoes are evenly coated.

      On a large baking sheet or a roasting pan, arrange the seasoned chicken thighs skin side up. Surround the chicken with the garlic olive oil potatoes.

        Drizzle additional olive oil on the chicken thighs and sprinkle with Parmesan cheese. This will create a golden crust while baking.

          Bake in the preheated oven for 40-45 minutes, or until the chicken is cooked through and has an internal temperature of 165°F (75°C). The potatoes should be fork-tender and crispy on the edges.

            Optionally, during the last 5 minutes of cooking, broil the dish to get a nice brown color on the chicken skin.

              Once done, remove from the oven and let it rest for about 5 minutes. Garnish with freshly chopped parsley before serving.
