1 lb boneless, skinless chicken breast, diced

1 tablespoon olive oil

1 onion, chopped

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup shredded cheddar cheese

1 cup cooked rice (white or brown)

Salt and pepper to taste

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.

      Add the minced garlic and diced bell pepper; stir and sauté for an additional 2-3 minutes.

        Increase the heat to medium-high and add the diced chicken breast to the skillet. Season with salt and pepper, and cook until the chicken is browned on all sides and cooked through, about 5-7 minutes.

          Stir in the black beans, corn, diced tomatoes with green chilies, and taco seasoning. Mix well to combine and let it cook for another 2-3 minutes.

            Add the cooked rice to the skillet, mixing it in thoroughly with the other ingredients.

              Sprinkle the shredded cheddar cheese evenly on top of the mixture in the skillet.

                Transfer the skillet to the oven and bake for 15-20 minutes, until the cheese is melted and bubbly.

                  Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro and serve with lime wedges.
