Ingredients
  

4 boneless, skinless chicken thighs

2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 small yellow onion, chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1/2 teaspoon cumin

Salt and pepper to taste

2 tablespoons olive oil

2 cups fresh spinach (optional)

Fresh parsley or cilantro for garnish

Instructions
 

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken thighs with salt, pepper, smoked paprika, thyme, and cumin.

    When the oil is hot, add the seasoned chicken thighs to the skillet and sear them for about 5-6 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.

      In the same skillet, add the remaining tablespoon of olive oil. Add the diced sweet potatoes and onion. Cook for about 8-10 minutes, stirring occasionally, until the sweet potatoes are tender but not fully cooked.

        Stir in the red bell pepper and minced garlic, cooking for an additional 2-3 minutes until fragrant.

          Return the chicken to the skillet, nestling it among the vegetables. Add a splash of water if needed to create steam, then cover and cook for another 10-12 minutes, or until the chicken is cooked through and the sweet potatoes are soft.

            If using fresh spinach, stir it in during the last minute of cooking until wilted.

              Serve hot, garnished with fresh parsley or cilantro for an added burst of flavor.
