2 ribeye steaks (about 1 inch thick)

Salt and black pepper, to taste

2 tablespoons olive oil

1 cup heavy cream

1 cup Gorgonzola cheese, crumbled

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 cloves garlic, minced

1 tablespoon balsamic vinegar

1 tablespoon unsalted butter

1/4 cup chopped fresh parsley, for garnish

Prepare the Steaks: Season both sides of the ribeye steaks generously with salt and black pepper. Let them sit at room temperature for about 30 minutes before cooking.

    Cook the Steaks: In a large skillet, heat olive oil over medium-high heat. Once hot, add the steaks to the skillet. Cook for about 4-5 minutes on each side for medium-rare, or until your preferred doneness is reached. Once finished, transfer the steaks to a plate and cover them loosely with foil to keep warm.

      Make the Gorgonzola Sauce: In the same skillet, reduce the heat to medium and add the minced garlic, sautéing for about 30 seconds until fragrant. Pour in the heavy cream and let it simmer for 2-3 minutes, stirring often until it thickens slightly.

        Add the Cheese: Stir in the crumbled Gorgonzola cheese, thyme, and balsamic vinegar. Keep stirring until the cheese is melted and the sauce is creamy and well-combined.

          Finishing Touch: Add the butter to the sauce and stir until melted. Taste and adjust seasoning if necessary.

            Serve: Slice the steaks if desired and plate them. Generously spoon the Gorgonzola sauce over the steaks. Garnish with chopped fresh parsley.
