Ingredients

3 cups all-purpose flour

1 cup warm water (about 110°F or 43°C)

2 teaspoons active dry yeast

1 teaspoon sugar

1 teaspoon salt

1 tablespoon olive oil

1 cup mixed olives (black and green), pitted and chopped

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 teaspoon garlic powder

Optional: Flaky sea salt for topping

Instructions

In a small bowl, activate the yeast by mixing it with warm water and sugar. Let it sit for about 5-10 minutes until it becomes frothy.

In a large mixing bowl, combine the all-purpose flour, salt, garlic powder, and chopped rosemary. Mix well.

Create a well in the center of the flour mixture and add the activated yeast mixture along with the olive oil.

Stir the mixture with a wooden spoon until a shaggy dough forms.

Add the chopped olives into the dough and mix until evenly distributed.

Transfer the dough to a well-floured surface and knead for about 8-10 minutes until smooth and elastic.

Shape the dough into a ball and place it in a lightly greased bowl, covering it with a clean cloth. Allow it to rise in a warm spot for about 1-2 hours or until doubled in size.

After rising, punch down the dough to release air and knead it lightly again for a minute.

Preheat your oven to 375°F (190°C).

Shape the dough into a round loaf and place it on a parchment-lined baking sheet. If desired, sprinkle flaky sea salt on top.

Cover the dough again for about 30 minutes to rise slightly.

Bake in the preheated oven for 25-30 minutes until golden brown and sounds hollow when tapped on the bottom.

Allow the bread to cool on a wire rack before slicing.

Prep Time: 15 minutes | Total Time: 2 hours 30 minutes | Servings: 10 slices

                              - Presentation Tips: Serve the olive bread warm or toasted with a side of olive oil and balsamic vinegar for dipping. You can also present it on a rustic wooden board, garnished with sprigs of rosemary.
