3 to 4 pounds beef chuck roast

2 tablespoons olive oil

1 large onion, chopped

4 cloves garlic, minced

4 medium carrots, sliced

4 medium potatoes, quartered

2 cups beef broth

1 cup red wine (optional, replace with more broth if desired)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

2 teaspoons dried thyme

2 teaspoons dried rosemary

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 275°F (135°C).

    Sear the Roast: In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Season the beef roast with salt and pepper. Once the oil is hot, carefully add the roast and sear for about 4-5 minutes on each side until browned. Remove the roast and set aside.

      Sauté Vegetables: In the same pot, add the chopped onion and garlic, sautéing for about 3 minutes or until the onion becomes translucent. Stir in the carrots and potatoes, cooking for an additional 2-3 minutes.

        Combine Ingredients: Stir in the tomato paste, Worcestershire sauce, thyme, and rosemary. Pour in the red wine (if using) and scrape the bottom of the pot to deglaze, letting the wine simmer for about 5 minutes.

          Add Broth and Roast: Return the roast to the pot. Pour the beef broth over the roast and vegetables, ensuring everything is submerged. Bring to a gentle simmer.

            Slow Cook in the Oven: Cover the pot with its lid and transfer it to the preheated oven. Allow it to cook for 3-4 hours, or until the meat is fork-tender.
