2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk, chilled

1 tablespoon honey (optional for a touch of sweetness)

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

      Add the cold cubed butter to the flour mixture. Using your fingers or a pastry cutter, work the butter into the flour until it resembles coarse crumbs with some pea-sized pieces.

        Pour in the chilled buttermilk and honey (if using). Stir gently with a fork until the dough comes together. Be careful not to overmix; it’s okay if there are a few lumps.

          Turn the dough out onto a lightly floured surface. Gently knead the dough just 3-4 times until it becomes cohesive. Pat the dough into a rectangle about 1 inch thick.

            Using a floured biscuit cutter, cut out the biscuits from the dough. Gather any scraps, re-pat, and cut out additional biscuits until all the dough is used.

              Place the biscuits on the prepared baking sheet, close together for soft sides or spaced apart for crispier edges.

                Bake in the oven for 12-15 minutes, or until golden brown on top and baked through.

                  Allow the biscuits to cool for a few minutes on the baking sheet before transferring them to a wire rack.
