Ingredients

1 cup rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup unsalted butter, softened

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 cup raisins

1/2 cup chopped walnuts or pecans (optional)

Instructions

Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper for easy removal.

In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract until well combined.

In a separate bowl, whisk together the rolled oats, flour, baking soda, salt, and cinnamon.

Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Fold in the raisins and nuts (if using) until evenly distributed.

Spread the mixture evenly into the prepared baking pan, smoothing the top with a spatula.

Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.

Remove from the oven and let the bars cool in the pan for about 10 minutes. Then, transfer them to a wire rack to cool completely.

Once cooled, cut into squares or bars and enjoy your delicious oatmeal raisin cookie bars!
