Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

1 cup buttermilk (or milk + 1 tsp vinegar)

½ cup vegetable oil

2 large eggs

2 teaspoons vanilla extract

1 cup hot water

1 cup fresh raspberries

½ cup Nutella

1 cup whipping cream (for frosting)

3 tablespoons powdered sugar (for frosting)

Extra raspberries and chocolate shavings for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a standard muffin tin with cupcake liners.

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until smooth. Gradually add the wet mixture to the dry ingredients and stir until just combined.

Add Hot Water: Slowly pour in the hot water, stirring until the batter is smooth and free of lumps. The batter will be quite thin.

Bake the Cupcakes: Fill each cupcake liner about 2/3 full with the batter. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 5 minutes, then transfer to wire racks to cool completely.

Prepare the Nutella Filling: Once the cupcakes are completely cooled, use a small knife or a cupcake corer to remove a small plug from the top of each cupcake. Fill the center of each cupcake with about 1 tablespoon of Nutella.

Make the Frosting: In a mixing bowl, beat the whipping cream and powdered sugar together until soft peaks form. Be careful not to overwhip; you want it smooth and fluffy.

Frost the Cupcakes: Use a piping bag or a spatula to frost each cupcake with the whipped cream frosting.

Garnish the Cupcakes: Top each frosted cupcake with fresh raspberries and a sprinkle of chocolate shavings for an extra touch.
