2 cups grated carrots

1 cup unsweetened applesauce

4 large eggs

1 teaspoon vanilla extract

1 cup almond flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts (optional)

1/2 cup raisins (optional)

Cream cheese frosting (made with unsweetened cream cheese, a few tablespoons of sugar-free sweetener, and vanilla, for topping)

Instructions
 

Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line it with parchment paper for easier removal.

    In a large mixing bowl, combine grated carrots, applesauce, eggs, and vanilla extract. Whisk together until well blended.

      In another bowl, mix the almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly combined.

        Gradually fold the dry ingredients into the wet mixture until fully incorporated. Be careful not to overmix.

          If desired, fold in the chopped walnuts and raisins for added texture and flavor.

            Pour the batter into the prepared cake pan and spread it evenly.

              Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

                Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

                  Once cooled, top with sugar-free cream cheese frosting if desired, and smooth it out evenly on top of the cake.
