Prepare the crust: In a mixing bowl, combine the crushed Oreo cookies and melted butter. Stir until well combined and the mixture resembles wet sand.
Press the crust: Line an 8x8 inch baking dish with parchment paper for easy removal. Press the Oreo mixture firmly into the bottom of the dish to form an even layer. Chill in the refrigerator while you prepare the filling.
Make the cheesecake filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add in the powdered sugar and vanilla extract, mixing until fully incorporated.
Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture until combined.
Add the chopped Oreos: Gently fold in the chopped Oreo cookies into the cheesecake batter.
Pour and spread the filling: Remove the crust from the refrigerator and pour the cheesecake filling over the crust. Spread it evenly using a spatula.
Chill to set: Cover the dish with plastic wrap and refrigerate for at least 4 hours or until fully set.
Serve and garnish: Once set, cut into bars and if desired, garnish with extra Oreo cookies on top. Serve chilled.
