Ingredients

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

2 ripe bananas, mashed

1 (8 oz) package cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup whipped cream (or whipped topping)

1/2 teaspoon cinnamon

Extra banana slices for garnish

Chocolate shavings for garnish (optional)

Instructions

In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs resemble wet sand.

Press about 2 tablespoons of the mixture into the bottom of each mini pie dish or muffin tin to form the crust. Use the back of a spoon to compact it down.

Place the crusts in the refrigerator to chill for about 10 minutes while preparing the filling.

In another mixing bowl, beat the softened cream cheese until smooth.

Gradually add the powdered sugar and continue mixing until fully combined. Then stir in the vanilla extract and cinnamon.

Gently fold in the desired amount of whipped cream until the mixture is light and fluffy.

Add the mashed bananas to the cream cheese mixture and gently mix until just incorporated. Be careful not to overmix.

Remove the pie crusts from the refrigerator and fill each one with the banana cream filling, smoothing the top with a spatula.

Place the mini pies back in the refrigerator and let them set for at least 1 hour before serving.

Just before serving, garnish each mini pie with a slice of banana and sprinkle with chocolate shavings if desired.

Prep Time: 20 minutes | Total Time: 1 hour 20 minutes | Servings: 12 mini pies

                        - Presentation Tips: Arrange the mini pies on a decorative platter and consider drizzling a bit of chocolate syrup around them for an elegant touch. Enjoy!
