1 cup orzo pasta

4 oz nduja sausage

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 cup cherry tomatoes, halved

2 cups vegetable broth

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

1/4 cup fresh basil, chopped

1/4 cup grated Parmesan cheese (for serving)

Instructions
 

Cook the Orzo: In a large pot, bring salted water to a boil and cook the orzo according to package instructions until al dente. Drain and set aside.

    Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic, and cook for an additional 1 minute until fragrant.

      Add Nduja: Crumble the nduja into the skillet. Allow it to cook for 2-3 minutes, stirring occasionally, until it becomes slightly caramelized and releases its flavorful oils.

        Incorporate Vegetables: Add the diced red bell pepper, zucchini, and cherry tomatoes to the skillet. Stir well and cook for about 5-7 minutes until the vegetables are tender.

          Mix in Broth and Seasoning: Pour in the vegetable broth and bring the mixture to a simmer. Add in the dried oregano, red pepper flakes (if using), and season with salt and black pepper to taste.

            Combine with Orzo: Once the broth is simmering, incorporate the cooked orzo into the skillet. Stir well to combine all ingredients, letting it simmer for another 2-3 minutes to meld the flavors together.

              Finish with Fresh Herbs: Remove from heat and stir in the chopped basil for a fresh touch.

                Serve: Dish out the nduja orzo into bowls and sprinkle with grated Parmesan cheese before serving.
