Mozzarella Stuffed Soft Pretzels

Ingredients
  

1 ½ cups warm water (110°F to 115°F)

1 packet (2 ¼ tsp) active dry yeast

1 tablespoon sugar

4 cups all-purpose flour

1 teaspoon kosher salt

½ cup baking soda

1 large egg, beaten

Coarse sea salt, for sprinkling

8 oz fresh mozzarella cheese, cut into 1-inch cubes

2 tablespoons unsalted butter, melted

Optional: garlic powder, marinara sauce for dipping

Instructions
 

Activate the Yeast: In a large mixing bowl, combine the warm water, yeast, and sugar. Allow it to sit for about 5-10 minutes until it becomes frothy.

    Make the Dough: Add the flour and kosher salt to the yeast mixture and stir until a shaggy dough forms. Knead the dough on a floured surface for about 5-7 minutes, until it's smooth and elastic.

      Let the Dough Rise: Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

        Preheat Oven and Prepare Baking Soda Bath: Preheat your oven to 450°F (232°C). In a large pot, bring 10 cups of water and the baking soda to a gentle boil.

          Shape the Pretzels: Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches). Fold the rope into a U shape, twist the ends together, then fold back down to form a pretzel shape.

            Stuff with Mozzarella: Before fully sealing the pretzel, place a cube of mozzarella in the center, tucking and sealing the ends around the cheese to ensure it's completely enclosed.

              Boil the Pretzels: Carefully place each pretzel into the boiling baking soda water for about 30 seconds, flipping them halfway through. Remove them and place them on a parchment-lined baking sheet.

                Brush and Sprinkle: Brush each pretzel with the beaten egg, and sprinkle with coarse sea salt. If desired, sprinkle garlic powder on top for added flavor.

                  Bake: Bake in the preheated oven for about 12-15 minutes, or until golden brown.

                    Serve: Remove from the oven and brush with melted butter. Let them cool slightly before serving. The mozzarella will be gooey and delicious. Serve with marinara sauce for dipping, if desired!
