Ingredients

1 cup natural peanut butter

1/2 cup honey or maple syrup

1 1/2 cups rolled oats

1/2 cup vanilla protein powder (whey or plant-based)

1/4 cup mini chocolate chips

1/4 cup M&M's or colorful chocolate candies

1/4 cup chopped nuts (peanuts or almonds work well)

1 teaspoon vanilla extract

A pinch of salt

Instructions

In a large mixing bowl, combine the peanut butter and honey (or maple syrup) until well blended and creamy.

Stir in the vanilla extract and a pinch of salt to enhance the flavors.

Add the rolled oats and protein powder to the mixture, mixing thoroughly until they are fully incorporated. You may need to use your hands to ensure all ingredients are combined.

Fold in the mini chocolate chips, M&M's, and chopped nuts, making sure they are evenly distributed throughout the mixture.

Refrigerate the mixture for about 30 minutes to make it easier to handle.

Once chilled, scoop out tablespoon-sized portions and roll them into balls using your hands. Repeat until all the mixture is used.

Arrange the protein balls on a parchment-lined baking sheet and let them sit in the fridge for another 30 minutes to firm up.

Store your Monster Cookie Protein Balls in an airtight container in the fridge for up to a week or freeze for longer storage.

Prep Time: 15 min | Total Time: 1 hr | Servings: 12-15 balls
