Ingredients

4 chicken thighs (bone-in, skin-on)

4 tablespoons unsalted butter, melted

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 teaspoon dried thyme

1 tablespoon fresh rosemary, chopped

1 lemon, zested and juiced

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Prepare the Butter Mixture: In a small bowl, combine the melted butter, garlic powder, onion powder, smoked paprika, salt, black pepper, thyme, lemon zest, and lemon juice. Mix well to create a flavorful glaze.

Prepare the Chicken: Pat the chicken thighs dry with paper towels. This helps the skin get crispy. Place them in a baking dish skin-side up.

Apply the Butter Mixture: Pour the butter mixture over the chicken thighs, ensuring they are evenly coated. Use a brush or your hands to rub it in well, especially under the skin where possible.

Baking: Bake in the preheated oven for about 45-50 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden brown and crispy.

Resting Time: Once done, remove from the oven, cover lightly with foil, and let the chicken rest for 5-10 minutes before serving. This helps the juices redistribute for more succulent meat.

Serve: Garnish with freshly chopped parsley and serve with your favorite side dishes, such as mashed potatoes or roasted vegetables. Enjoy the buttery, aromatic flavors of this comforting dish!
