Ingredients

4 medium-sized russet potatoes

1 cup sour cream

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon, crumbled

4 green onions, finely chopped

1/4 cup butter, melted

2 tablespoons milk

1 tablespoon garlic powder

1 tablespoon onion powder

Salt and pepper to taste

1/2 cup mini marshmallows (optional for a sweet twist)

1/4 cup chocolate syrup (optional for a drizzle)

Instructions

Preheat oven: Preheat your oven to 400°F (200°C).

Prepare the potatoes: Scrub the russet potatoes under running water and pat them dry. Prick each potato several times with a fork to allow steam to escape during baking.

Bake potatoes: Place the potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes, or until tender when pierced with a fork.

Mix filling: In a large bowl, combine sour cream, shredded cheddar cheese, crumbled bacon, chopped green onions, melted butter, milk, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are fully incorporated.

Stuff potatoes: Once the potatoes are done baking, remove them from the oven and let them cool slightly. Cut each potato lengthwise and gently scoop out some of the flesh with a spoon, leaving a bit on the sides. Add the scooped potato flesh to the bowl with the filling and mix until creamy.

Fill potatoes: Spoon the potato filling back into each potato skin, mounding it slightly higher than the edges.

Add marshmallows (optional): If you want a sweet twist, sprinkle mini marshmallows on top of each stuffed potato.

Bake again: Place the stuffed potatoes back on the baking sheet and return them to the oven. Bake for an additional 10-15 minutes, until the filling is heated through and the marshmallows are golden brown (if used).

Drizzle chocolate syrup (optional): For an interesting flair, drizzle chocolate syrup over the potatoes right before serving.

Serve: Allow the potatoes to cool for a minute before serving. Enjoy your Mississippi Mud Potatoes as a fun side dish or a hearty main course!
