Instructions
In a large pot of boiling water, cook the noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
In a medium bowl, whisk together the peanut butter, soy sauce, sesame oil, honey (or maple syrup), rice vinegar, minced garlic, and grated ginger until smooth and well combined.
In a large mixing bowl, add the drained noodles and pour the sauce over them. Toss everything together until the noodles are evenly coated with the peanut sauce.
Divide the noodles into serving bowls. Garnish with chopped green onions, crushed peanuts, sesame seeds, and fresh cilantro, if using.
Drizzle a little extra sesame oil over the top for enhanced flavor.
