1 cup crushed graham crackers

4 tablespoons unsalted butter, melted

2 cups cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1/3 cup heavy cream

2 tablespoons brown sugar (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust: In a medium bowl, combine the crushed graham crackers and melted butter. Mix until the crumbs are evenly coated.

      Form the Crust: Place a tablespoon of the graham cracker mixture into the bottom of each muffin cup in a lined muffin tin. Press down firmly to create a compact crust.

        Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the granulated sugar, mixing until well combined.

          Add Flavorings: Mix in the vanilla extract, and then add the eggs one at a time, beating well after each addition. Slowly pour in the heavy cream and continue mixing until the mixture is completely smooth.

            Fill the Muffin Tin: Pour the cheesecake filling over the prepared crusts in the muffin tin, filling each cup about 3/4 full.

              Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the edges are set and the center slightly jiggles when gently moved.

                Cool and Chill: Once baked, remove from the oven and let them cool to room temperature. After cooling, refrigerate for at least 4 hours or overnight for the best texture.

                  Add the Caramelized Topping: Before serving, sprinkle a thin layer of brown sugar on top of each cheesecake. Use a kitchen torch to caramelize the sugar until it forms a golden, crispy crust. If you don’t have a torch, broil them in the oven for 1-2 minutes, watching closely to prevent burning.

                    Serve: Allow the caramelized topping to cool for a minute before serving.
