1 cup graham cracker crumbs

3 tablespoons unsalted butter, melted

1 tablespoon granulated sugar

8 oz cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1/2 cup heavy cream

1 teaspoon cornstarch

2 tablespoons brown sugar (for topping)

Fresh berries (for garnish, optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 325°F (160°C). Line a mini muffin tin with paper liners or lightly grease with non-stick spray.

    Make the Crust: In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated with butter.

      Assemble the Crust: Press about 1 tablespoon of the crumb mixture into the bottom of each muffin cup, creating an even layer. Use a small glass or your fingers to compact the crumbs firmly.

        Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue to beat until well combined.

          Add the Eggs and Cream: Mix in the vanilla extract and cornstarch. Then, add the eggs one at a time, mixing well after each addition. Finally, pour in the heavy cream and beat until fully blended and smooth.

            Fill the Cups: Carefully pour the cheesecake filling over the crusts in each muffin cup, filling them about 3/4 full.

              Bake: Bake in the preheated oven for 18-20 minutes, or until the cheesecake cups are set but still slightly jiggly in the center. The edges should look firm and lightly golden.

                Cool: Once baked, remove the muffin tin from the oven and allow the cheesecake bites to cool at room temperature for about 30 minutes. Then, transfer to the refrigerator and chill for at least 2 hours before serving.

                  Caramelize the Topping: Just before serving, sprinkle an even layer of brown sugar on top of each cheesecake bite. Use a kitchen torch to caramelize the sugar until it melts and forms a crispy crust. If you don’t have a torch, you can place them under the broiler for 1-2 minutes, watching closely.
