3 ripe bananas, mashed

1/3 cup melted coconut oil

1/2 cup brown sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 cup all-purpose flour

1/4 cup chopped walnuts (optional)

1/4 cup mini chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a mini muffin pan with paper liners or grease it lightly with cooking spray.

    In a mixing bowl, combine the mashed bananas and melted coconut oil, and whisk until well combined.

      Add the brown sugar to the banana mixture and whisk until smooth. Then add the egg and vanilla extract, mixing until fully incorporated.

        In a separate bowl, mix together the baking soda, salt, cinnamon, nutmeg, and flour. Stir this dry mixture into the banana mixture, blending gently until just combined. Be careful not to overmix.

          Fold in the chopped walnuts and mini chocolate chips, if using, until evenly distributed throughout the batter.

            Spoon the batter into the prepared mini muffin pan, filling each cup about 2/3 full.

              Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.

                Once baked, remove the muffins from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
