Ingredients

1 cup crushed graham crackers

4 tablespoons unsalted butter, melted

2 tablespoons granulated sugar

2 ripe bananas, sliced

1 cup heavy whipping cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup vanilla pudding mix (instant)

2 cups milk

Chocolate shavings (for garnish)

Fresh mint leaves (for garnish)

Instructions

In a medium bowl, combine the crushed graham crackers, melted butter, and granulated sugar. Mix until well combined.

Press the graham cracker mixture into the bottom and up the sides of a muffin tin to form mini crusts. Use your fingers or the back of a spoon to press them down firmly.

Bake the crusts in a preheated oven at 350°F (175°C) for 5-7 minutes until lightly golden. Remove and let them cool completely.

In another bowl, whisk together the vanilla pudding mix and milk until smooth. Set aside to thicken for about 5 minutes.

Meanwhile, in a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.

Fold half of the whipped cream into the thickened pudding mixture until combined.

Spoon a layer of sliced bananas into the bottom of each mini pie crust, followed by a layer of the pudding mixture.

Top each mini pie with the remaining whipped cream, smoothing it out with a spatula.

Chill the mini pies in the refrigerator for at least 1 hour to set.

Before serving, garnish with chocolate shavings and fresh mint leaves.
