Ingredients

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

2 tablespoons granulated sugar

2 ripe bananas, sliced

1 cup heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup vanilla pudding mix (instant)

1 1/2 cups milk

Whipped cream (for topping)

Chocolate shavings or banana chips (for garnish)

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated and resemble wet sand.

Form Mini Crusts: Press the crumb mixture into the bottom and up the sides of mini pie pans or muffin tins to create a crust. Bake in a preheated oven at 350°F (175°C) for about 8-10 minutes, until lightly golden. Remove and let cool completely.

Make Pudding Filling: In a separate bowl, whisk together the vanilla pudding mix with 1 1/2 cups of milk until thickened. Allow to set for about 5 minutes.

Whip the Cream: In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract with an electric mixer on medium-high speed until stiff peaks form.

Combine Cream with Pudding: Gently fold about half of the whipped cream into the pudding mixture until well combined. This creates a creamy filling.

Assemble the Pies: Place a layer of banana slices at the bottom of each cooled mini pie crust. Spoon the pudding mixture over the bananas, filling each crust generously.

Top with Whipped Cream: Use the remaining whipped cream to dollop generously on top of each mini pie.

Chill and Serve: Refrigerate the assembled mini pies for at least 1 hour to set. Before serving, garnish with chocolate shavings or banana chips for added flair.
