For the Shortbread Base:

1 cup (226g) unsalted butter, softened

1/2 cup (100g) granulated sugar

2 cups (240g) all-purpose flour

1/4 teaspoon salt

1/2 teaspoon vanilla extract

For the Caramel Layer:

1 can (14 oz or 396g) sweetened condensed milk

1/2 cup (100g) granulated sugar

1/4 cup (85g) unsalted butter

1 tablespoon corn syrup

A pinch of salt

For the Chocolate Topping:

8 oz (227g) dark chocolate, chopped

2 tablespoons unsalted butter

Instructions
 

Prepare the Shortbread Base:

    - Preheat your oven to 350°F (175°C). Grease and line a 9x9 inch (23x23 cm) baking pan with parchment paper, leaving an overhang for easy removal.

      - In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

        - Add the flour, salt, and vanilla extract to the butter mixture, and mix until a dough forms.

          - Press the dough evenly into the bottom of the prepared pan. Prick the surface with a fork to prevent bubbling.

            - Bake in the preheated oven for 15-20 minutes, or until lightly golden. Allow to cool completely.

              Make the Caramel Layer:

                - In a medium saucepan over medium heat, combine the sweetened condensed milk, granulated sugar, butter, corn syrup, and salt.

                  - Stir continuously until the mixture is melted and begins to bubble. Continue to cook, stirring constantly, for about 5-10 minutes until the caramel thickens and turns a deep golden color.

                    - Pour the caramel over the cooled shortbread base and spread it evenly. Allow it to set at room temperature for about 30 minutes.

                      Prepare the Chocolate Topping:

                        - In a double boiler or microwave, melt the dark chocolate and unsalted butter together, stirring until smooth.

                          - Once the caramel has set, pour the melted chocolate over the caramel layer and smooth it out evenly.

                            - Refrigerate for at least 2 hours, or until the chocolate is firm.
