Ingredients

1 lb flank steak (or skirt steak)

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon ground cumin

1 tablespoon chili powder

1 teaspoon smoked paprika

Salt and pepper to taste

8 corn tostadas

1 cup refried beans

1 cup shredded lettuce

1 ripe avocado, sliced

1 cup diced tomatoes

1/2 cup crumbled queso fresco

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

In a bowl, mix the olive oil, minced garlic, cumin, chili powder, smoked paprika, salt, and pepper to create a marinade.

Rub the marinade all over the flank steak and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Preheat your grill or cast-iron skillet over medium-high heat. Remove the steak from the marinade and grill for about 5-7 minutes on each side, or until it reaches your desired level of doneness.

Once cooked, let the steak rest for 5 minutes before slicing it thinly against the grain.

While the steak rests, spread a layer of refried beans on each tostada.

Top the beans with shredded lettuce and a generous portion of the sliced carne asada.

Add slices of avocado and diced tomatoes on top of the steak.

Finish it off by sprinkling crumbled queso fresco and fresh cilantro on each tostada.

Serve with lime wedges on the side for an extra zesty touch!
