Ingredients
  

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 can (15 oz) refried beans

10 corn tortillas

2 cups red enchilada sauce (homemade or store-bought)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

Fresh cilantro leaves, for garnish

1 avocado, diced (optional)

Sour cream, for serving (optional)

Instructions
 

Prepare the Meat Filling: In a large skillet over medium heat, add the ground beef and cook until browned, breaking it up with a spatula. Drain excess fat if necessary.

    Add Aromatics: Stir in the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.

      Season the Mixture: Sprinkle the cumin, chili powder, smoked paprika, salt, and black pepper into the skillet. Combine well and cook for an additional 2 minutes to allow the spices to bloom.

        Combine with Refried Beans: Remove the skillet from heat and mix in the refried beans until thoroughly combined.

          Prepare the Tortillas: In a separate skillet, lightly warm the corn tortillas one by one for about 30 seconds on each side to make them pliable (optional: you can also microwave them with a damp paper towel for about 30 seconds).

            Fill the Tortillas: Spoon about ¼ cup of the beef mixture into the center of each tortilla. Roll it up tightly and place seam-side down in a greased 9x13 inch baking dish.

              Top with Sauce and Cheese: Once all tortillas are placed in the dish, pour the red enchilada sauce evenly over the top. Sprinkle the shredded cheddar and Monterey Jack cheese over the sauce.

                Bake: Preheat your oven to 375°F (190°C). Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.

                  Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro, diced avocado, and a dollop of sour cream before serving.
