4 fresh cod fillets (about 6 oz each)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 lemon (zested and juiced)

1 cup cherry tomatoes, halved

1 avocado, diced

½ cup cilantro, chopped

1 jalapeño, finely chopped (optional for heat)

½ cup Greek yogurt

1 tablespoon lime juice

Lettuce leaves (for serving)

Instructions
 

Preheat your oven to 400°F (200°C).

    On a baking sheet lined with parchment paper, place the cod fillets.

      Drizzle olive oil over the fillets. Season with smoked paprika, garlic powder, salt, and pepper.

        Sprinkle the lemon zest over the fish and squeeze half of the lemon juice on top.

          Scatter the cherry tomatoes evenly around the cod fillets on the baking sheet.

            Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.

              While the fish is baking, prepare the avocado salad by combining diced avocado, chopped cilantro, jalapeño (if using), and remaining lemon juice in a bowl. Toss gently to combine; season with salt and pepper to taste.

                In a separate small bowl, mix the Greek yogurt with lime juice to create a creamy sauce.

                  Once the fish is done, assemble the dish by placing lettuce leaves on a plate, followed by a cod fillet, a generous scoop of the avocado salad, and a drizzle of the yogurt sauce.
