4 white fish fillets (such as cod, tilapia, or sea bass)

2 tablespoons olive oil

2 lemons (1 sliced into rounds, 1 juiced)

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

1/2 cup Kalamata olives, pitted and halved

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 400°F (200°C).

    Take a large baking dish and drizzle 1 tablespoon of olive oil along the bottom.

      Place the fish fillets in the baking dish and season both sides with salt, pepper, garlic powder, oregano, and smoked paprika.

        Squeeze the juice of one lemon evenly over the fish, then place lemon slices on top of each fillet.

          In a bowl, combine the cherry tomatoes, red onion slices, and Kalamata olives. Drizzle with 1 tablespoon of olive oil and a pinch of salt and pepper, mixing gently.

            Scatter the tomato mixture evenly around the fish in the baking dish.

              Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the fish is flaky and cooked through.

                Remove the foil for the last 5 minutes of baking to allow the fish to brown slightly on top.

                  Once done, remove from the oven, garnish with freshly chopped parsley, and serve warm.
