4 slices of sourdough bread

2 cups fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/2 cup mozzarella cheese, shredded

1/4 cup sun-dried tomatoes, chopped

1/4 cup black olives, pitted and diced

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Optional: Fresh basil leaves for garnish

Instructions
 

Prepare the Spinach Mixture: In a medium bowl, combine the chopped spinach, feta cheese, mozzarella cheese, sun-dried tomatoes, black olives, garlic powder, salt, and pepper. Mix until everything is well incorporated.

    Assemble the Sandwiches: Lay out two slices of sourdough bread on a clean surface. Evenly distribute the spinach mixture onto each slice, ensuring you cover them well. Place the remaining two slices of bread on top to create two sandwiches.

      Heat the Pan: In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat.

        Cook the Grilled Cheese: Once the oil is hot, carefully place the sandwiches into the skillet. Cook for about 3-4 minutes, or until the bottoms are golden brown and crispy.

          Flip and Finish Cooking: Add the remaining tablespoon of olive oil around the edges of the sandwiches, carefully flip them over, and cook for an additional 3-4 minutes until both sides are golden and the cheese is melted.

            Serve: Remove the sandwiches from the skillet and let them sit for a minute before slicing in half. If desired, garnish with fresh basil leaves.
