Ingredients
  

1 large bag of blue corn tortilla chips

1 cup hummus (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1 tablespoon olive oil

1 teaspoon lemon juice

Salt and pepper to taste

Instructions
 

Preheat your oven to 350°F (175°C).

    Spread the blue corn tortilla chips evenly on a large baking sheet.

      Drizzle a little olive oil over the chips, and bake for about 5-7 minutes, just until they are warm and slightly crispy.

        While the chips are baking, prepare the toppings. In a mixing bowl, combine the cherry tomatoes, diced cucumber, red onion, Kalamata olives, and the chopped parsley.

          Drizzle the lemon juice over the mixture and season with salt and pepper. Gently toss until evenly combined.

            Remove the chips from the oven and generously dollop or spread the hummus over them, ensuring good coverage.

              Evenly distribute the vegetable mixture over the hummus-covered chips.

                Sprinkle the crumbled feta cheese on top of the nachos.

                  Place the assembled nachos back into the oven for an additional 5-10 minutes until the feta is warmed through (but not melted) and everything is heated nicely.

                    Serve immediately, garnished with extra parsley if desired.
