4 white fish fillets (such as cod or halibut)

2 tablespoons olive oil

1 lemon, zested and juiced

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and halved

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, whisk together olive oil, lemon juice and zest, minced garlic, oregano, thyme, paprika, red pepper flakes, salt, and pepper until well combined.

      On a large baking sheet lined with parchment paper, arrange the fish fillets in a single layer.

        Brush the herb mixture generously over each fish fillet, making sure they are well coated.

          Scatter the halved cherry tomatoes and Kalamata olives around the fish on the baking sheet.

            Drizzle any remaining herb mixture over the tomatoes and olives for added flavor.

              Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and is cooked through.

                Remove from the oven and let it rest for a few minutes before garnishing with freshly chopped parsley.
