Mashed Potato Meatloaf Casserole

1 lb ground beef (or turkey)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup breadcrumbs

1 large egg

2 tablespoons Worcestershire sauce

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon dried Italian herbs (basil, oregano, thyme)

4 cups mashed potatoes (store-bought or homemade)

1 cup shredded cheddar cheese

½ cup milk

¼ cup chopped fresh parsley (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x13 inch casserole dish.

    Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, egg, Worcestershire sauce, salt, pepper, and Italian herbs. Mix until well blended.

      Shape the Meatloaf: Transfer the meat mixture to the prepared casserole dish and shape it into a loaf, pressing down slightly to ensure it stays together.

        Bake the Meatloaf: Bake in the preheated oven for 30-35 minutes, or until the meatloaf reaches an internal temperature of 160°F (70°C) and is nicely browned.

          Prepare the Mashed Potatoes: While the meatloaf is baking, if using homemade mashed potatoes, prepare them with milk and butter until creamy. If using store-bought, heat according to package instructions.

            Add Mashed Potatoes and Cheese: Remove the casserole from the oven and spread the mashed potatoes evenly over the top of the meatloaf. Sprinkle shredded cheddar cheese on top of the mashed potatoes.

              Final Bake: Return the casserole to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Remove from the oven and let sit for a few minutes. Garnish with chopped fresh parsley before serving.
