12 oz cheese tortellini (fresh or frozen)

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust for spice preference)

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup spinach, chopped

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Cook Tortellini: In a large pot of boiling salted water, cook the tortellini according to package instructions. Drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

      Add Tomatoes: Incorporate the halved cherry tomatoes into the skillet, cooking until they begin to soften, about 3-4 minutes.

        Create Creamy Sauce: Reduce the heat to low and pour in the heavy cream, stirring to combine. Allow the sauce to simmer gently for about 2-3 minutes, until it thickens slightly.
