Ingredients

1 lb chicken breast, cut into bite-sized pieces

1 tbsp olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 tsp Italian seasoning

½ tsp red pepper flakes (optional)

1 cup sun-dried tomatoes, chopped

1 cup spinach, fresh

2 cups cheese tortellini (fresh or frozen)

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil, chopped (for garnish)

Instructions

In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

In the same skillet, add minced garlic and sauté for 1 minute until fragrant.

Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream, Italian seasoning, and red pepper flakes (if using). Bring the mixture to a simmer.

Add the sun-dried tomatoes and spinach to the sauce, stirring until the spinach is wilted.

Add in the tortellini and cooked chicken. Stir to combine and simmer for 5-7 minutes, or until the tortellini is cooked through.

Stir in the grated Parmesan cheese and adjust the seasoning with salt and pepper to taste.

Serve hot, garnished with fresh basil. Enjoy your romantic meal!
