2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

½ cup grated Parmesan cheese

½ teaspoon red pepper flakes (optional)

1 teaspoon Italian seasoning

Fresh basil leaves, for garnish

8 oz. pasta (penne or fettuccine)

Instructions
 

Prep the Chicken: Season the chicken breasts with salt and pepper on both sides.

    Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and let rest.

      Sauté Aromatics: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.

        Add Tomatoes: Stir in the cherry tomatoes and cook until they are slightly softened (about 2-3 minutes).

          Create the Sauce: Pour in the heavy cream and chicken broth. Stir well and bring to a simmer. Add Parmesan cheese, red pepper flakes (if using), and Italian seasoning. Allow the sauce to thicken for about 5-7 minutes over low heat.

            Cook the Pasta: In a separate pot, cook the pasta according to package instructions. Drain and set aside.

              Combine: Slice the cooked chicken and add it back to the skillet with the sauce. Then add the cooked pasta, tossing everything to combine well.

                Serve: Plate the pasta and chicken, garnishing with fresh basil and an extra sprinkle of Parmesan if desired.
