1 lb boneless, skinless chicken thighs

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 cup orzo pasta

2 cups low-sodium chicken broth

1 cup cherry tomatoes, halved

1/2 cup sun-dried tomatoes, chopped

1 cup baby spinach, packed

1/2 cup heavy cream

1/2 cup parmesan cheese, grated

Fresh basil, for garnish

Sear the Chicken: Begin by heating the olive oil in a large pan over medium-high heat. Season the chicken thighs with salt, pepper, garlic powder, and Italian seasoning. Once the oil is hot, add the chicken and sear for about 5-7 minutes on each side until golden brown. Remove the chicken and set it aside.

    Cook the Orzo: In the same pan, add the orzo and toast it lightly for about 2 minutes. This adds a nutty flavor to the dish.

      Add Broth and Tomatoes: Pour in the chicken broth and stir in the cherry and sun-dried tomatoes. Bring the mixture to a simmer, then return the chicken to the pan, nestling it among the orzo. Cover and cook for about 15 minutes, or until the orzo is al dente and the chicken is cooked through.
