4 chicken thighs (bone-in, skin-on for more flavor)

3 cloves garlic, minced

1 medium onion, chopped

1 bell pepper (red or green), chopped

1 teaspoon fresh thyme or 1/2 teaspoon dried thyme

1 teaspoon fresh marjoram or 1/2 teaspoon dried marjoram

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon paprika

1 tablespoon lime juice

1/4 cup vegetable oil

Salt and pepper to taste

Optional: 1 Scotch bonnet pepper, whole (for added heat)

Fresh cilantro for garnish

Instructions
 

In a large bowl, combine minced garlic, chopped onion, chopped bell pepper, thyme, marjoram, cayenne pepper, paprika, lime juice, vegetable oil, salt, and pepper. Mix well to create a marinade.

    Add the chicken thighs to the bowl, ensuring they are nicely coated with the marinade. If using, poke the Scotch bonnet pepper into the mix for extra heat. Cover and refrigerate for at least 2 hours, or ideally overnight for deeper flavor.

      Preheat the oven to 400°F (200°C).

        Remove the chicken from the marinade and place it skin-side up on a baking sheet lined with parchment paper. Discard any leftover marinade and the Scotch bonnet pepper, if used.

          Roast in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy. You can broil for an additional 2-3 minutes for added crispiness if desired.

            Once done, allow the chicken to rest for 5 minutes before serving. Garnish with fresh cilantro for a pop of color and added freshness.
