1.5 lbs pork tenderloin

1/4 cup pure maple syrup

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika (optional)

Fresh parsley, for garnish (optional)

Prepare the Marinade: In a medium bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, olive oil, minced garlic, thyme, salt, black pepper, and smoked paprika until well combined.

    Marinate the Pork: Place the pork tenderloin in a large resealable bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour (or up to 8 hours for more flavor).

      Preheat the Oven: When ready to cook, preheat your oven to 400°F (200°C).

        Sear the Pork: Remove the pork from the marinade (reserve the marinade for basting). Heat a large oven-safe skillet over medium-high heat. Add a splash of olive oil, then sear the tenderloin on all sides until browned (about 3-4 minutes per side).

          Bake the Pork: Once seared, brush the reserved marinade over the pork tenderloin. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the internal temperature reaches 145°F (63°C).

            Rest and Slice: Carefully remove the pork from the oven and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.
